Rose Cookies

‘Tis the season to be jolly and what better way to enjoy Christmas than with delicious homemade rose cookies also known an Achu Murukku - an absolute treat and Christmas delight.

Serves: 4-5

Cooking time: 60 min

Ingredients

  • Maida - 1/4 cup
  • Rice powder – 1 cup
  • Sugar - 1/2 cup
  • Coconut Milk - 1/2 cup (+ 1 or 2 tbsp if needed)
  • Salt - a pinch
  • Sesame seeds: 1tsp
  • Aashirvaad Svasti Ghee for frying

Preparation

  • In a bowl, blend rice powder, maida, sugar, salt, coconut milk and sesame seeds. Mix for a few minutes till it forms a smooth batter.
  • Heat Aashirvaad Svasti Ghee in a kadai. Place the murukku mould in the hot Ghee and then dip it into the batter. Make sure only 80% of the murukku mould is covered with the batter.
  • Now, hold the mould inside the hot Ghee and shake the handle gently to release the rose cookies into the kadai. Let it fry in medium heat till both sides have an even golden brown colour.
  • Prepare the remaining cookies in the same way.
  • Your rose cookies are now ready. Serve with Christmas cake and Kul Kuls.
